Banana Earl Grey Tea Cake

We unexpectedly came to have plenty of bananas the other day after one of our neighbors gave us a bunch from what they had planted. Not knowing what to do with them, I had to search for recipes to use them in.

This Banana Eary Grey Tea cake is something I came up with thinking and hoping that the combination would taste well. It did. Mild tasking and a good amount of moisture. I am pretty proud of having come up with a decent cake, despite being quite the amateur!

Ingredients:

All Purpose Flour1.5 cups/187g
Replace 4 tbsp with Corn Flour
Butter113g, melted
Sugar1 cup, table suger
Baking Powder1 tsp
Baking Soda1 tsp
Earl Grey Tea2 tea bags
Milk1 cup
Yoghurt2/3 cup
Bananas2, medium sized. I used Yelakki banana

Method:

  1. Sieve all the dry ingredients and set aside.
  2. Heat the milk in a separate bowl and empty the contents of the tea bags into it. Mix using a spoon and keep aside for around 5 minutes for the flavour to dispense.
  3. If the bananas are not ripe enough to smash using a fork, heat them in a microwave for 30 seconds-1 minute to soften them and then smash them. I didn’t want to have lumps in the cake, so I smashed them as finely as I could using the fork, but if you prefer, you can keep them lumpy.
  4. Add all the wet ingredients into a bowl. and mix well.
  5. Add the dry ingredients in portions into the bowl and mix using the cut and fold method. Do not over mix. If you prefer, add the dry ingredients in two halves, so the mixing becomes easier.
  6. Transfer the mixture to a 6″ cake pan.
  7. Bake for 45minutes at 180 Celsius.
  8. Once baked, set aside to cool.
  9. Once cooled, you can top it with chocolate syrup or keep it as is before serving

Tips:

  • If you’re using Salted Butter, omit the extra Salt
  • You can combine white and brown sugar. I measured normal table sugar directly and used it as is, without grinding it to powder
  • If you do not like to have the leaves in the cake, use the tea bags normally, by dipping it in hot milk and use the flavoured milk.
  • This recipe has a mild sweetness. If more is desired, increase the sugar as needed.
